Special Features:
Maturation in Madeira casks gives this Boann Single Pot Still its distinctive character. Its mash is made from locally grown malted and unmalted barley, oats and rye. The whiskey first matures in heavily charred, 200-litre ex-bourbon casks from Brown-Forman, made from American oak. It then spends time in Madeira Colheita casks from Justino’s. These previously held Tinta Negra wines from 1998 and 2000, a Boal from 1999, and Sercial wines from 1999, 2000 and 2006.
The Madeira wines range from sweet to dry and were aged using the Canteiro method, which naturally exposes the wines in their casks to higher temperatures. The casks used for them had previously been 350-litre French oak Cognac casks. The different wines bring together peach, honey and vanilla with walnut and fruitcake; toasted oak spice and subtle minerality complement the whiskey’s spicy pot still character. Bottled at 47% alcohol, it is non-chill filtered and contains no added colouring. Introduced in 2024 as part of a three-whiskey Single Pot Still range, its design represents water, referring both to the River Boyne and to the Atlantic around Madeira.
Tasting Notes:
- Nose: Apples and peaches appear on the nose, followed by honey and toasted oak spice, with delicate floral notes in the background.
- Palate: The whiskey feels velvety on the palate: peach and cream come first, followed by vanilla, walnut and fruitcake with dried fruit. A subtle minerality runs throughout.
- Finish: The long, clean finish brings fresh lemon oil and a lingering savoury spice.
Distillery/Bottler:
The family-run Boann Distillery is located in Ireland’s Boyne Valley and was founded by Patrick and Marie Cooney together with their family. It mills its grain, prepares its mash, distils and matures its spirits on site, using water from its own well in the Boyne Valley. Its mash recipes include grains such as oats and rye alongside barley, continuing the Irish Single Pot Still tradition. Boann makes and bottles this whiskey itself. For its second period of cask maturation, the distillery works with the Madeira house Justino’s.
