Special Features:

El Sol acquires its cask character throughout its maturation in freshly emptied first-fill casks from Jerez that are still wet with sherry. The selection includes casks that previously held Oloroso, Pedro Ximénez, Amontillado, Palo Cortado, Fino or Moscatel. The result is a dense, full-bodied single malt with fruit, dessert notes, dark chocolate, coffee and a subtle touch of smoke.

The whisky is bottled at 46%, at natural colour and without chill filtration.

Tasting Notes:

• Nose: Sweet orange peel and orange blossom stand out clearly on the nose. Smoky oak, sweet almonds, raisins, figs and berries follow, complemented by nuances of vanilla, plum and spices.
• Palate: On the palate, the whisky balances oak with fruity sweetness. Its dense, viscous texture carries matchstick, spiced dark chocolate, cola, honeycomb, vanilla and stone fruit, along with smoky and savoury accents; the flavours remain present for a long time.
• Finish: The finish is long, deep and balanced, fading gently. Sweet espresso, plum, dried fruit and delicate oak spice linger.

Distillery/Bottler:

Callington Mill distils El Sol in Oatlands and bottles the whisky itself. John Vincent had the windmill at the site built in 1837; alongside flour production, he operated what was then an illicit distillery there. In 2021, founder John Ibrahim established a modern whisky distillery on the restored site. Today, Callington Mill works with water from the nearby Blackman River, a seven-day fermentation and oak casks from its own cooperage.
