Special Features:

This five-year-old Tasmanian single malt is matured entirely and exclusively in ex-Oloroso sherry casks. Still-wet, freshly emptied first-fill casks from southern Spain are used for this purpose. Tasmania’s cool highland climate also shapes the maturation. The whisky is bottled at 46% alcohol with natural colour and without chill filtration.

Walnuts and hazelnuts define the nutty foundation. Figs, plums and raisins provide concentrated dried-fruit notes, while dark toffee, spices and oak add richness and structure. The velvety mouthfeel underlines the full-bodied character created by maturation exclusively in Oloroso casks.

Tasting Notes:

• Nose: On the nose, vanilla, toasted marshmallows and milk-bottle sweets meet dried herbs, Christmas spices and pronounced oak.
• Palate: On the palate, buttered popcorn and dried fruit combine with balanced, lingering oak. The velvety texture coats the tongue and develops greater depth and length on the mid-palate.
• Finish: The long, warming finish remains herbal, with lingering notes of bitter dark chocolate, charred tobacco and toasted oak.

Distillery/Bottler:

Callington Mill Distillery is located in Oatlands in Tasmania’s highlands and draws on the heritage of the historic Callington Mill precinct. Entrepreneur John Vincent had the windmill built in 1837 to produce flour for the growing community. Alongside this legal enterprise, he also operated a distillery there that was illicit at the time. The restored mill and the other historic buildings connect today’s distillery closely with the history of the site.

Founder John Ibrahim discovered whisky through Dysart House and an encounter with Tasmanian whisky pioneer Bill Lark. A trip to Scotland together in 2016 strengthened his plans to establish his own distillery. In creating Callington Mill, he combined this historic setting with modern Tasmanian distilling equipment developed specifically for the project. The distillery produces the single malt in Oatlands and bottles it under its own brand.
