Special Features:

The Solera Single Malt is created using Callington Mill’s own adaptation of the Spanish solera principle. For every bottling, a portion is drawn from each of the 14 cask positions. The volume removed is progressively replaced with whisky from another cask, with younger matured whisky entering the system at the final stage. Older and younger components therefore come together as the composition continues to evolve.

The 14 cask positions comprise Tokay, Australian Port, Amontillado, Brandy, Bourbon, Bourbon Ex-Muscadelle, Bourbon Ex-Rum, Palo Cortado, Madeira, Moscatel, Cognac, Sherry Butt Ex-Cream, Australian Brandy and Tawny. The whisky is bottled at 46% ABV in a 0.7-litre bottle without chill filtration or added colouring.

Tasting Notes:

• Nose: The nose combines orange blossom and mandarin peel with delicate notes of marzipan and charred oak. Vanilla-scented almond and a mossy forest floor add deeper accents.
• Palate: Intense bitter orange and smoky, charred oak open the lively, smooth palate. Vanilla and mandarin then emerge with a creamy, buttery texture.
• Finish: The long finish combines lingering mandarin peel and oak with honeycomb. It is both sweet and dry, fading with a delicate tingle.

Distillery/Bottler:

Callington Mill Distillery is located in historic Oatlands, Tasmania. Founder John Ibrahim commissioned a modern distillery there in 2021. It operates with Tasmanian technology developed specifically for Callington Mill.

The distillery takes its name from the windmill built by John Vincent in 1837 within the restored Mill Precinct. At the time, the historic complex also included an illicit still. Today, Callington Mill produces and bottles the Solera Single Malt as a distillery bottling under its own brand.
