This Islay single malt was distilled in 2016, matured for ten years and was finished by Signatory Vintage in 1st and 2nd Fill Oloroso Sherry Butts. Part of the Un-Chillfiltered Collection, it is bottled at 46% in a volume of 0.7 litres, without added colouring or chill filtration.

Powerful peat smoke provides an aromatic counterpoint to raisins, figs and dark chocolate. Salted caramel, spicy oak and marzipan connect the spirit’s smoky character with the influence of the Oloroso finish.

Tasting Notes:

• Nose: The nose combines gentle peat smoke with raisins and bitter chocolate, complemented by toasted almonds.
• Palate: Figs, dark berries and creamy caramel bring fullness to the palate. Marzipan and pronounced oak spice give the flavour profile definition.
• Finish: Peat smoke, dark chocolate and spicy oak remain present throughout the long finish. Delicate salinity and lingering sherry sweetness round it off.

Distillery/Bottler:

Hector Henderson founded Caol Ila Distillery in 1846 on the east coast of Islay. The distillery is located near Port Askaig on the Sound of Islay, which separates Islay from the neighbouring island of Jura. This is where the single malt was produced; the Caol Ila brand belongs to Diageo.

As the independent bottler, Signatory Vintage was responsible for the maturation, Oloroso finish and bottling. Andrew Symington founded the company in 1988; today, Signatory Vintage operates at the Edradour site in Pitlochry.
