Bourbon cask maturation and subtle smoke shape Cask Orkney 15 Year Old. This lightly peated single malt belongs to A.D. Rattray's Casks of Scotland range and matures entirely in ex-bourbon casks. Stone fruit and spice are central to its character alongside the smoke.

For the range's small batches, A.D. Rattray selects up to 20 casks from a single distillery and marries the whiskies matured in them. Cask Orkney is bottled at 46%. The whisky is neither chill-filtered nor coloured. Natural variations can occur between batches, while the overall flavour style remains consistent.

The edition draws on the Neolithic heritage of the Orkney Islands. In September 2022, A.D. Rattray introduced the fifteen-year-old expression as the younger successor to the previously available Cask Orkney 18 Year Old. The bottle contains 0.7 litres and comes in a presentation tube.

Tasting Notes:

• Nose: On the nose, clover honey and violet notes meet ripe peach. Smoky hints recall smouldering heather.
• Palate: On the palate, grilled plums combine with the sweetness of barley sugar sweets. Noble hops and caraway add herbal and spicy notes to the sweet, fruity flavours.
• Finish: Peppery smoke lingers through the long finish. Tart citrus notes and pine provide a fresh contrast.

Distillery/Bottler:

A.D. Rattray's roots lie in 19th-century Glasgow. Andrew Dewar Rattray founded the company in 1868, initially trading in European wines, spirits and olive oil. The business also developed expertise in storing and blending malt and grain whiskies. It supplied merchants, publicans and whisky blenders in western Scotland and represented the Highland distillery Stronachie, among others.

The Walker and Morrison families shaped the company's path towards becoming today's independent bottler. Stanley Walker Morrison acquired A.D. Rattray in 1993; his personal cask selection became the basis for the Cask Collection in 2004. Since 2011, the company has been based in the former school in Kirkoswald, Ayrshire, alongside its whisky shop. While the Cask Collection showcases individual casks, Casks of Scotland brings together selected casks from the same distillery in small batches with a regional character.
