Roundstone Rye Cask Proof is the cask-strength pinnacle of the Roundstone range. Catoctin Creek uses only locally grown Virginia rye for this whiskey. The grain is mashed and fermented on site before being distilled in copper pot stills. The whiskey matures in new charred Virginia oak casks. The whiskey from selected casks is bottled without chill filtration; the European version contains 0.7 litres at 58% and is released only around twice a year.

Caramel and butterscotch combine with orange, lemon and peppery rye spice. Dark chocolate, cocoa, leather, tobacco and oak take the powerful profile in a drier direction, while a subtle clove note adds further spice.

Tasting Notes:

• Nose: Orange and dry rye grain define the nose, accompanied by honey, spices and a subtle trace of black pepper.
• Palate: The rye is full-bodied and powerful on the palate: plum and orange emerge first, followed by leather, honey and spices.
• Finish: Pepper and leather carry the long, fresh and spicy finish.

Distillery/Bottler:

Becky and Scott Harris founded the Catoctin Creek Distilling Company in Purcellville, Virginia, in 2009 as the first legal distillery in Loudoun County since before Prohibition. Becky Harris draws on her training as a chemical engineer in her role as Chief Distiller. Production centres on two pot stills, with each distillation run lasting nine hours. The distillery produces Roundstone Rye entirely in-house and bottles it as its flagship whiskey.
