Special features: The Connacht Single Cask Cabernet Sauvignon Whiskey is an Irish whiskey produced by the Connacht Distillery in Ballina, County Mayo. The distillery was founded in 2015 and is the first of its kind in the region in 150 years. This whiskey is aged in both first-fill bourbon casks and Cabernet Sauvignon casks. The maturation of the malt took place from December 2017 to October 2020. After the initial aging in bourbon casks, the bottling was done in a single Cabernet Sauvignon cask that had been dried for 36 months.

Tasting Notes:

• Nose: The nose impresses with ripe fruit notes of figs, black currants, and soft apples, complemented by dried fruits such as pears, strawberries, and raisins. There are also crispy malt aromas and soft spice notes of mace, thyme, and rosemary.
• Palate: On the palate, intense malt and malt sugar notes dominate, accompanied by pronounced roasted aromas of Brazil nuts and almonds. With slight dilution, additional spicy and fruity aspects emerge, while dried fruits like prunes and raisins are noticeable.
• Finish: The finish is powerful and slightly oily, with the roasted notes transforming from nutty aromas to dark cocoa powder.

Distillery/Bottler: The Connacht Whiskey Company is responsible for the production of this whiskey and emphasizes careful maturation of the malts. The Connacht Distillery, located in Ballina, represents a modern approach to whiskey production. After a takeover by Terroir Distillers in 2024, the distillery was renamed Ballina Distillery. Here, the whiskey is triple distilled to achieve a special purity and variety of flavors.
