Special features: This winter batch release comes from the Daftmill Farm in the Scottish Lowlands, where, in addition to agriculture, single malt whisky has been produced using traditional craftsmanship since 2006. The whisky matures for 12 years exclusively in first fill bourbon casks and is only distilled in the off-season when the fields are resting. The winter release 2024 is limited to 7,500 bottles and is based on the barley variety Publican, which was harvested in 2009 and malted in 2010.
Tasting Notes:
- Nose: Fresh notes of grain, green apples, and delicate floral hints, accompanied by fine vanilla from the bourbon cask.
- Palate: Balanced with malty sweetness, hints of honey, light wood, and slightly nutty nuances.
- Finish: Clear and persistent, with elegant spice and a subtle fruit acidity in the aftertaste.
Distillery/Bottler: The Daftmill Farm is located in the Lowlands of Scotland and combines traditional agriculture with whisky distilling. The Cuthbert family processes their own grain on-site and places great emphasis on quality and locality. The distillery works in small batches and usually limits production to off-season months to avoid disrupting agricultural activities. The original bottlings represent craftsmanship and sustainable manufacturing processes.
