For this Irish Single Pot Still whiskey, Dingle processes locally sourced malted and unmalted barley in a wooden mash tun and triple-distils the resulting spirit. The recipe therefore follows the Single Pot Still style and differs from Dingle Single Malt, which uses only malted barley.

The cask composition of this small-batch bottling consists of 59% bourbon casks, 33% Oloroso sherry casks and 4% each of PX sherry and red wine casks. Dingle combines the resulting batches of whiskey for bottling. The whiskey is bottled at 46.5% in a 0.7-litre bottle; it is neither chill-filtered nor coloured.

Tasting Notes:

• Nose: The nose combines gentle baking spices with nutmeg, cinnamon and allspice.
• Palate: Cooked dark fruits and brown sugar meet spiced apple compote on the palate, while the texture is velvety.
• Finish: Classic pot still spice emerges first, followed by toasted oak and gentle honey, while nutmeg remains present in the finish.

Distillery/Bottler:

Founded in 2012 by Oliver Hughes, Liam LaHart and Peter Mosley, Dingle Distillery operates in Dingle, County Kerry, on Ireland’s Atlantic coast. Its whiskeys are triple-distilled and bottled there, and all maturation also takes place on site. Dingle produces this Single Pot Still whiskey itself and releases it as its own distillery bottling.
