Special Features:

Japanese yuzu fruit takes centre stage in Etsu Double Yuzu. Its pre-dried peel is one of six botanicals, alongside juniper berries, liquorice and angelica roots, coriander seeds and matcha tea. The mixture macerates for seven days. The botanicals are removed before distillation, so only the infused alcohol enters the still.

Water from the Ōu mountains is added to the distillate. The gin is bottled at 43% alcohol in a bottle containing 0.7 litres and supplied in gift packaging. Its fresh citrus character suits cocktails as well as a gin and tonic.

• Palate: On the palate, yuzu brings lively acidity and delicate sweetness. The gin feels fresh and vibrant.
• Finish: The finish is rounded and soft, with lingering citrus freshness.

Distillery/Bottler:

Akita Distillery lies in the north of Japan's main island, Honshū, near the Ōu mountains. Alongside Double Yuzu, it also produces Etsu Double Orange and Etsu Sakura. The distillery uses sugarcane alcohol made from molasses: its strength is 67% during maceration and is reduced to 30% before distillation. A single distillation in a copper still yields a distillate at 65%. Mountain water then brings it down to 43%, and it is passed through a fine-mesh filter; it is not chill-filtered.
