Foxes Bow Release 01 combines bourbon cask maturation with a finish in former Oloroso sherry and rye whiskey casks. The idea for the rye cask influence grew out of the founders’ experiences in North America: they wanted to bring the region’s established rye whiskey tradition into an Irish release. Working with Great Northern Distillery, they developed a bespoke recipe. The triple-distilled blend is bottled at 43%.

The different cask influences bring fruity sweetness together with spice. Alongside the sherry notes, there are dried red fruits and nutty hints. For the founders, the chosen bottling strength was also a matter of flavour: the whiskey needed to hold its own both neat and in mixed drinks. It is bottled without added colouring or chill filtration.

The design is also part of the concept behind this first release. Its neon-coloured label features a section of a larger artwork created for Foxes Bow by John Slade of H.Y.T Studio, a London-based graphic designer originally from Limerick. Release 01 won gold in the Blended Irish Whiskey with no age statement category at the Irish Whiskey Awards 2022.

Tasting Notes:

• Nose: On the nose, floral notes mingle with sweet vanilla and toasted wood.
• Palate: The whiskey is bold and balanced on the palate. Fruity sherry notes give way to spice, before velvety vanilla sweetness rounds things off.
• Finish: Sweet fruit notes and vanilla linger through the long finish.

Distillery/Bottler:

Foxes Bow is the creation of Alice Carroll and Tony Foote of Alt Liquor Co. Launched in 2021, the brand takes its name from a small side street in Limerick where people from different creative professions come together. This connection shapes its approach: Foxes Bow collaborates with Irish artists, pairing whiskey development with contemporary design. Carroll brought experience from her previous work for Jameson, other Pernod Ricard whisky brands and Roe & Co.

The whiskey is distilled at Great Northern Distillery in Dundalk, County Louth. Operating since 2015, the distillery develops bespoke whiskey blends with brand partners and also handles cask maturation and marrying. It uses both pot stills and column stills to produce different types of Irish whiskey. For Foxes Bow, its team worked with the founders on the desired recipe and rye cask influence.
