A second-fill Oloroso Sherry Butt shapes this single-cask release from Glen Keith. After 26 years of maturation, Andrew Symington selected the whisky for Symington's Choice within the Cask Strength Collection. The edition combines pronounced dried-fruit notes with spiced baked goods and a dry sherry character.

Glen Keith distilled the whisky on 11 September 1996. Signatory Vintage bottled it from cask number 7 on 7 July 2023, producing 635 individually numbered bottles. Its natural cask strength is 58%. The whisky was neither chill-filtered nor coloured. The 0.7-litre bottle comes in a metal tin.

Tasting Notes:

• Nose: Raisins, figs and dates emerge first on the nose. Honey and soft vanilla notes then join them. Leather and dark spice remain in the background.
• Palate: The whisky feels velvety on the palate despite its 58% strength. Spiced gingerbread and malt bread combine with dark molasses and dried fruit. Towards the end, a nutty bitterness provides a counterpoint to the sweetness.
• Finish: The very long finish carries the dried fruit and spice onwards. It gradually becomes drier, recalling walnut shells and dry sherry.

Distillery/Bottler:

Glen Keith is located in the town of Keith in Scotland's Speyside region. The distillery officially opened in May 1960 and was among the early adopters of automated production processes in the Scottish whisky industry. Production ceased between 1999 and 2013, so this vintage dates from before that long period of closure.

Independent bottler Signatory Vintage was founded in Edinburgh in 1988 by Andrew Symington and his brother. Andrew's interest in the differences between individual whisky casks developed while he was working at the Prestonfield House Hotel. After purchasing Edradour distillery in 2002, Signatory relocated its operations entirely to Pitlochry by 2007. Additional warehouses were built there to hold more than 20,000 casks. Andrew Symington personally selects the casks for Symington's Choice.
