The fourth chapter in the Sherry Series within The Wood Collection, this bottling explores the influence of a targeted finish in Palo Cortado casks. The series contrasts different types of sherry cask while giving each whisky the same initial maturation history.

The eleven-year-old single malt initially matured for around seven years in ex-bourbon casks made from American oak. It then spent approximately four years in Palo Cortado puncheons and hogsheads from Cádiz. It is bottled at 48%, with natural colour and without chill filtration.

The rare Palo Cortado sherry style combines the aromatic finesse of an Amontillado with the structure and richness of an Oloroso. In this GlenAllachie, its dry, complex sherry character meets the distillery’s characteristic heather-honey note and a profile of dark fruit, spices, mocha and chocolate.

Tasting Notes:

• Nose: On the nose, cinnamon, butterscotch and plum combine with heather honey, raisins and candied ginger.
• Palate: The palate opens with toasted honeycomb, blackberry and baking spices. Maraschino cherry, mocha and plum preserve follow, complemented by dark treacle and dark chocolate.
• Finish: The long, well-defined finish carries the Palo Cortado influence through notes of dark treacle and dark chocolate. Cinnamon, mocha and plum gradually fade. Clove and sweet fruit notes linger last.

Distillery/Bottler:

The GlenAllachie Distillery was built in 1967 to plans by William Delmé-Evans and began production in 1968. From the outset, its facilities were designed to operate largely by gravity, reducing their energy requirements.

Billy Walker, Trisha Savage and Graham Stevenson acquired the distillery in 2017. Just nine months later, they launched their first core range of GlenAllachie single malts; previously, the distillery had supplied most of its whisky for blends. For this official bottling, Master Distiller Billy Walker selects the casks and marries their whiskies for bottling.
