GlenAllachie 21 y.o. - Batch 7 is the seventh release of the distillery’s 21-year-old cask-strength expression and forms part of its core range. Master Distiller Billy Walker composed it from selected stocks held across the distillery’s 16 warehouses.

The whisky was initially matured in bourbon casks. This was followed by an extended secondary maturation in Spanish Pedro Ximénez and Oloroso sherry puncheons and hogsheads. This sequence of casks shapes its pronounced sherry character, with dark fruit, mocha, chocolate, honey and warming spices.

Batch 7 was bottled at a natural cask strength of 51.9%, with no added colouring and without chill filtration. The individual batches are deliberately not identical reproductions: experience gained from previous releases informs each new cask composition.

Tasting Notes:

• Nose: On the nose, baked ginger and mocha mingle with honeycomb, spiced orange and candied hazelnuts, while toasted cinnamon and cocoa provide darker accents.
• Palate: On the palate, dark cherries, mocha and poached red apples meet Mānuka honey, candied ginger and muscovado sugar. Damsons, raisin buttercream and dark sugar syrup deepen the sweet, spicy fruit character.
• Finish: The long, spicy and pleasantly dry finish brings together Mānuka honey and raisin buttercream with dark chocolate, walnuts and dried fruit.

Distillery/Bottler:

The GlenAllachie Distillery was built in 1967 to plans by William Delmé-Evans and began production in 1968. After its whisky had long been destined primarily for blends, Billy Walker, Trisha Savage and Graham Stevenson acquired the distillery in 2017. Nine months later, they launched their first permanent core range of GlenAllachie Single Malts.

Under the new ownership, annual production was reduced to one million litres of alcohol despite a capacity of four million, while fermentation was extended to 160 hours. Billy Walker and his team monitor the casks in the distillery’s own warehouses throughout maturation and determine when each whisky is ready for bottling. As an independent distillery, GlenAllachie also works with a broad selection of woods and cask types.
