First, the Single Grain Irish Whiskey ages in new bourbon barrels, followed by a six-month finishing in Oloroso sherry casks from Montilla, Spain. This combination gives it depth and complexity.
Tasting Notes:
Nose: Rich aromas of dark fruits like cherries, raisins, and figs, accompanied by floral notes of lemongrass and a hint of nutmeg.
Palate: Sweet and smooth with butterscotch, honey, and peppercorns, complemented by dried fruits, maraschino cherries, and brown sugar.
Finish: Spicy notes of ginger and a hint of almonds round off the complex flavor.
Distillery/Bottler: The Glendalough Distillery was founded in 2011 in County Wicklow and is known for its artisanal whiskey production. The name "Glendalough" means "valley of two lakes" and refers to the idyllic surroundings of the distillery.
