GlenWyvis The Drover - Highland Legacy Series

Special Features:

The Drover is the first release in the Highland Legacy Series, through which GlenWyvis honours traditional Highland occupations. Limited to 3,000 bottles worldwide, it pays tribute to the cattle drovers of Dingwall. Local artist Fiona Mackenzie designed the label.

The whisky matured in a combination of 37% first-fill Sauternes barriques, 30% first-fill Madeira hogsheads, 21% high-strength first-fill bourbon barrels and 12% first-fill Oloroso hogsheads. This cask composition brings together sweet, nutty and spicy impressions. GlenWyvis bottled the whisky at 46.5%; it is neither chill-filtered nor coloured.

Tasting Notes:

• Nose: The nose offers leather and milk chocolate alongside fresh walnut, streusel, poached pear and caramel sweets.
• Palate: On the palate, walnut, pepper and cacao nibs mingle with orange zest and apple.
• Finish: The long, nutty finish begins with cocoa, roasted nuts, dark chocolate and bitter almond, followed by sweet-tart notes of green apple.

Distillery/Bottler:

Founded in 2015, GlenWyvis Distillery is located near Dingwall below Ben Wyvis. It is owned by a community of more than 3,000 investors, and whisky production began there in 2018. The distillery uses wind, hydro and solar power, as well as biomass, in its operations. GlenWyvis releases The Drover as an official bottling under its own brand.

With The Drover, GlenWyvis draws on Dingwall’s connection to traditional cattle droving as the theme for the first release in the Highland Legacy Series.
