Aurora Australis combines a creamy pastry character with fruity stone-fruit notes. This single malt is made in Tasmania’s remote northwest and bottled at 40% without chill filtration or added colouring.

Its name refers to the southern lights, which can be seen from the distillery’s location. With this whisky, Hellyers Road pays tribute to its home among fertile farmland and cool temperate forests in the island’s northwest.

Tasting Notes:

• Nose: The nose opens with crème brûlée and warm brioche. Buttery biscuits and rich vanilla custard then emerge. Delicate gingerbread and floral notes complement the aromas.
• Palate: On the palate, juicy apricot and ripe peach mingle with velvety cream. Pineapple adds a bright fruity accent while the sweetness persists.
• Finish: The finish is medium in length and leaves a lingering sweetness.

Distillery/Bottler:

Hellyers Road Distillery was established in 1997 by a dairy cooperative in northwestern Tasmania whose roots date back to 1956. The distillery remains predominantly owned by descendants of the farming families involved. It stands on the historic Hellyers Road, which led from the Bass Strait coast into the mountainous interior. A small team with strong local roots handles everything from production to marketing; many employees have a background in the dairy industry.

Northwestern Tasmania’s cool maritime climate brings relatively modest temperature fluctuations and high humidity. The distillery takes these conditions into account when maturing its whiskies. Head Distiller Fiona Coutts previously worked as a microbiologist and biochemist. Her quality-control experience informs the work from raw-material selection through fermentation and distillation to monitoring maturation.
