Hellyers Road Select Casks brings together two distinct maturation styles: a triple-distilled component matured in American oak ex-bourbon casks is married with whisky matured in French oak port wine casks. The bottling builds on the Twin Oak concept. It combines separately matured whiskies rather than giving the entire whisky a port wine finish.

This single malt comes from Tasmania and is bottled at 45.5% in a 0.7-litre bottle. It is non-chill filtered and contains no added colouring. Both the dark blue gift packaging and the bottle label feature gold lettering and the distillery's emblem.

• Finish: The finish is long and smooth, with lingering nutmeg and further spice notes.

Distillery/Bottler:

Hellyers Road Distillery is located in Burnie, Tasmania. Its origins lie with a group of dairy farmers who drew on their milk-processing experience to design their own unusual stills. For its unpeated whiskies, the distillery uses Tasmanian barley malted nearby and rainwater for mashing.

Fermentation lasts an average of 50 hours, with cooling keeping the temperature at no more than 32 °C. The distillery then carries out slow distillation runs. The tall shape of the first still encourages reflux as vapours condense, while copper components in the condensers provide further copper contact. The cuts between the distillate fractions are determined through sensory assessment. Hellyers Road matures its whisky in warehouses around the distillery, some close to the Bass Strait. The cool, humid coastal climate allows gentle, long-term cask maturation.
