Sea of Orkney is a 16-year-old Highland Park distillery bottling made for travel retail. It combines whisky from first-fill, sherry-seasoned European oak casks, refill casks and sherry-seasoned American oak casks. These different casks contribute fruit, spice and soft vanilla notes.

Dried apricots and figs meet nutmeg, almonds, brown sugar and bittersweet cocoa, while aromatic heather peat adds a restrained smoky accent. The whisky has a natural deep amber colour and contains no added colouring. It is offered at 44.5% in a 0.7-litre bottle with gift packaging.

Tasting Notes:

• Nose: The nose reveals dried apricots and figs alongside heather, a little vanilla and finely ground almonds. A delicate hint of smoke remains in the background.
• Palate: On the palate, nutmeg combines with vanilla, dark chocolate and subtle oak. The texture is velvety, while the peat smoke remains restrained.
• Finish: The long finish brings together the mild sweetness of brown sugar, almonds, cocoa and a gentle woody note. A touch of peat smoke and a fine trace of saltiness linger.

Distillery/Bottler:

Highland Park Distillery makes its single malt in Kirkwall on Scotland’s Orkney Islands and traces its history back to 1798. Highland Park is one of Edrington’s single malt brands.

The distillery operates two traditional kilns, turns malt by hand on its malting floor, uses four copper stills and matures whisky in dunnage warehouses. Its work with malt and peat helps explain Highland Park’s characteristic heather smoke.
