Special Features:

Maturation in previously used refill hogsheads gives this Highland Single Malt a distinctly peaty, salty character. Distilled in 2007, the whisky matured for 19 years. Thompson Bros bottled it in July 2026 at 57.1%.

The whisky retains its natural colour and is not chill filtered. It may therefore become cloudy when cold or after water is added. WHISKYHOBO designed the label. The bottling is offered in a bottle containing 0.7 litres, without gift packaging.

Tasting Notes:

• Nose: On the nose, charred hazelnuts meet dusty, peaty malt and milled grain. Burnt sage, rosemary, oily fishing ropes and tar complement crushed seashells and heather smoke. Quince and apple peel add delicate fruity accents.
• Palate: The whisky is very powerful on the palate. Pronounced citrus notes, heather honey and cooked apples combine with salt and the minerality of wet slate. Smoked ham, anchovies and capers in brine give it a savoury side. Malt and saltiness define the flavour.
• Finish: Salty peanut brittle emerges on the finish. The peat remains powerful, earthy and robust, while cigar smoke lingers.

Distillery/Bottler:

Thompson Bros is run by brothers Phil and Simon Thompson from Dornoch in the Scottish Highlands. Their exploration of older whiskies at the Dornoch Castle Hotel bar inspired them to start distilling themselves. Following a crowdfunding campaign, whisky production began in 2017 in a former fire station dating from the 1880s. While their own whisky matured, the brothers developed their independent bottling business.

For its independent bottlings, the team handles maturation, bottling, dilution and filtration in-house, taking an individual approach to each release. Alongside this, its own Dornoch Distillery works with traditional barley varieties and yeasts from local breweries. These methods belong to its own whisky production; the Highland malt distilled in 2007 is an independent bottling by Thompson Bros.
