Holyrood Embra

Special features: The Holyrood Distillery, founded in 2019, brings single malt production back to Edinburgh after over a century. Embra, the second release from the distillery, combines 56% peated malt with a triple maturation in first fill bourbon barrels, Islay quarter casks, and new American oak barrels. The design of the bottle is inspired by the patron saint of coopers, St. Leonard, fitting for the distillery's location on St. Leonard's Lane.

Tasting Notes:

  • Nose: Lemon peel, horse chestnut, with hints of peppermint and light hickory smoke.
  • Palate: Wafer cookies, dark chocolate mousse, and notes of earthy Highland peat smoke.
  • Finish: Pear compote with a round, clean finish.

Distillery/Bottler: The Holyrood Distillery was founded in 2019 in Edinburgh and aims to revive the long-forgotten tradition of single malt whisky in the Scottish capital. It combines artisanal methods with an experimental spirit, utilizing various malt types, fermentation techniques, and cask types. The distillery is closely linked to the history of Edinburgh, which is reflected in the naming and design of its products.
