HYDE No. 7 is an Irish single malt made from 100% malted Irish barley. The whiskey is triple-distilled in a traditional copper pot still and matured for at least six years entirely in toasted 250-litre Oloroso hogsheads from Cádiz. It is bottled at 46%, without chill filtration or added colouring.

Peach, orange, lemon and banana combine with vanilla, honey and caramel to create a fruity, sweet aromatic profile. Chocolate, malted barley and spices add further depth to its pronounced sherry character.

Cooked fruit and grapes are joined by roasted almonds and roasted coffee, adding a darker dimension. Brazil nut, chilli chocolate, fig, fruit compote and pink peppercorn complement the nutty, spicy character.

Tasting Notes:

• Nose: On the nose, peach and a creamy note combine with vanilla, soft barley malt, citrus, honey, caramel and chocolate; orange, lemon, banana and spices complete the layered aroma.
• Palate: The whiskey is simultaneously smooth and complex on the palate, with a creamy, fruity character. Caramel and Manuka honey meet apricot and plum, accompanied by a silky malt texture. Brazil nut and almond, together with chilli chocolate and spices, complement the nutty, spicy impression.
• Finish: The finish is full-bodied, spicy and oak-led, lingering with length and intensity. Its fruity, creamy side combines wild honey, fig and fruit compote with a piquant nuance of pink peppercorn.

HYDE is a bonded Irish whiskey company based in County Cork. It selects whiskey from Irish distilleries and oversees cask selection, maturation, blending and bottling. HYDE sources its casks directly from distilleries and bodegas in various regions.

The whiskeys mature in County Cork, in the mild oceanic climate of Ireland’s south-west coast. No. 7 comes from a single Irish distillery whose name HYDE does not disclose. Hibernia Distillers is responsible for the brand and bottling, while the whiskey is distilled at this unnamed distillery.
