Volume: 0.7 litres | Alcohol content: 48.3% | Chill filtration: No | Colouring: No
Special Features:
This Caol Ila matured for a total of eight years and was finished for more than six months in European Palo Cortado sherry hogsheads. James Eadie bottled the Islay single malt at 48.3%. The whisky has its natural colour and is not chill-filtered.
Peat smoke and salty sea air meet citrus and vanilla. Caramel, nuts, dark fruit and oak complement its smoky, maritime character, while the Palo Cortado finish adds restrained sherry notes and nutty sweetness.
Tasting Notes:
- Nose: Fresh coastal smoke, lemon peel and sea spray take centre stage on the nose. Gentle oak, nutty notes and restrained sweetness round out the bouquet.
- Palate: The whisky is smoky, maritime and lively on the palate; citrus, toasted nuts and spices mingle with subtle sherry richness and balanced sweetness.
- Finish: The finish is clean and lingering, with gentle smoke, spicy oak, a salty coastal note and delicate nuttiness.
Distillery/Bottler:
Founded in 1846, the Caol Ila Distillery stands in north-eastern Islay beside the Sound of Islay and produced the malt for this bottling. When the distillery was rebuilt in the early 1970s, its six stills were recreated in their previous shapes to preserve its distillery character. The malt comes from Port Ellen, while spring water from Loch nam Ban supplies the distillery.
Independent bottler James Eadie gave the whisky its Palo Cortado finish and bottled it at natural colour without chill filtration. The present-day company continues the legacy of James Eadie’s brewing and bottling business, founded in 1854. His great-great-grandson Rupert Patrick revived the family whisky with the help of surviving business ledgers and a historic bottle; the company focuses on cask finishes, single casks and small-batch bottlings.
