KI ONE Eagle is a Korean single malt matured in Kentucky bourbon casks and new oak from Missouri. Within the core range, the eagle represents the American contribution to the brand’s international founding story. This original 0.7-litre bottling is released at 43%, without chill filtration or added colour; it combines sweetness with a robust oak structure.

Its flavour profile initially brings robust oak and caramel to the fore. Vanilla, nutmeg, banana and sultanas follow, with pepper, cinnamon and lingering oak rounding it off.

Tasting Notes:

• Nose: Robust oak and caramel emerge on the nose, while vanilla adds to the sweet character.
• Palate: On the palate, sweet vanilla and nutmeg combine with nuances of banana and sultanas.
• Finish: Oak remains present throughout the long finish, while pepper and cinnamon add spicy accents.

Distillery/Bottler:

KI ONE Distillery was founded in June 2020 on the slopes of Baekbongsan near Namyangju. Three Societies was established by Korean craft beer pioneer Bryan Do, Scottish Master Distiller Andrew Shand and Jun Seo. Their different backgrounds are reflected in the symbolic figures of the tiger, eagle and unicorn.

The distillery uses groundwater from its own well and ferments the wort for 100 to 150 hours in stainless-steel tanks. The spirit is then double-distilled in copper Forsyths stills. During the second distillation, only the best 10 to 15% of the distillate is selected as the heart cut for filling the casks.

Temperatures in the warehouse range from around −25 °C in winter to more than 35 °C in summer. This pronounced seasonal variation causes the spirit to move intensively into and out of the wood, promoting substantial interaction between the whisky and the cask.
