Special Features:

This Knockdhu spent its entire maturation in a second-fill Oloroso Sherry Butt. Distilled on 9 June 2008, it was bottled from cask 7 on 22 May 2025 after 16 years. The single cask yielded 677 bottles for Signatory Vintage’s Cask Strength Collection. The whisky was bottled at 56.9% cask strength, without chill filtration or added colouring.

Oloroso dried fruit and chocolate sit alongside malt sweetness and orange peel. Walnut and cocoa accompany the long, slightly dry finish. The 0.7-litre bottle comes in a metal tin.

Tasting Notes:

• Nose: On the nose, raisins, figs and orange peel mingle with walnut, milk chocolate and toffee, followed by cinnamon and clove.
• Palate: The whisky is full-bodied on the palate. Malt sweetness supports the Oloroso dried fruit, with caramel, cocoa, nuts and spices adding further layers.
• Finish: The finish is long and warming, with lingering chocolate and nuts and a touch of dryness.

Distillery/Bottler:

Knockdhu Distillery opened in 1894 in the Scottish village of Knock. It produces the single malt that it markets under the name anCnoc for its own bottlings. The distillery still uses copper stills and wooden washbacks, and matures whisky in traditional dunnage warehouses.

Signatory Vintage was founded in 1988 by Andrew Symington and his brother as an independent bottler. The company selects individual casks and bottles their whisky under its own name. For this Cask Strength Collection release, Signatory Vintage selected the whisky from Knockdhu cask 7.
