Rye takes centre stage in this KOVAL whiskey: its grain recipe consists of 100% organically grown rye from a farming cooperative in the American Midwest. Only the heart of the distillation is used for cask maturation; the heads and tails are separated.
The whiskey matures in new, charred American oak casks holding approximately 114 litres. Compared with larger casks, these have a greater internal wood surface area relative to the volume of liquid. Each bottle contains whiskey from a single cask, so slight differences between individual casks are possible.
Bottled at 40% alcohol in a 0.5-litre bottle, this whiskey can be enjoyed neat or in a Manhattan. Alongside its rye spice, it offers sweet hints of maple syrup and candy corn, an American sweet shaped like a kernel of corn.

KOVAL was founded in Chicago in 2008 by Sonat Birnecker Hart and Robert Birnecker. Robert brought his Austrian family's distilling tradition to the venture. Together, they established a distillery that handles every stage itself, from milling and mashing the grain through distillation and maturation to bottling on site.
The distillery uses a custom-built copper still from Kothe in Germany. Its water comes from Lake Michigan and is charcoal-filtered. The American oak casks are made by The Barrel Mill in Minnesota; KOVAL uses each one only once for whiskey maturation. The spirits are certified organic by MOSA and kosher by the Orthodox Union.
