The aging occurs in several stages: first three months in ex-bourbon barrels, then over three years in ex-Bordeaux barrels, and a small part ages for an additional three months in ex-peated whiskey casks. The entire storage takes place in the microclimate of the storehouse at Lakeview Estate near Killarney.
