Lind & Lime puts juniper at the heart of its recipe, pairing it with fresh lime peel and pink peppercorns. The pink peppercorns add warming spice to the fresh citrus character. All seven botanicals are organically grown. Alongside these three defining ingredients, the recipe includes coriander, angelica, liquorice and orris root.

Organic neutral grain spirit, water and six botanicals are combined in the copper still and left to macerate for 16 hours. The fresh, hand-peeled lime zest is placed separately in a vapour basket. During the nine-hour distillation, the rising vapours pass through the peel and take up its citrus aromas. The still is heated exclusively using electricity from renewable sources.

Tasting Notes:

• Nose: On the nose, juniper, pine and fresh lime peel mingle with pink peppercorns. Coriander seed and liquorice add to the spicy impressions, accompanied by a note of angelica root.
• Palate: The palate reveals aromatic, rounded juniper with earthy notes and fresh citrus accents. Pink peppercorns bring spice and a slight sweetness, while the mouthfeel is oily.
• Finish: The finish is clean and lively, with medium to long persistence. Juniper and pink peppercorns remain present as the lime note fades.

Distillery/Bottler:

Muckle Brig Ltd produces Lind & Lime at the Lind & Lime Gin Distillery on Coburg Street in Leith, Edinburgh, and also owns the brand. Founded in 2014, the company grew out of a plan to build a new whisky distillery in Edinburgh; its brands also include The Port of Leith Distillery.

After distillation, the gin rests for at least two weeks. It is then bottled on site and labelled by hand. Its entirely plastic-free packaging includes a natural cork and a plastic-free tamper-evident seal.
