Mulassano Rosso brings together Turin's vermouth tradition and production at Bordiga in Cuneo. This Vermouth di Torino IGP combines a wine base with extracts of herbs, spices and roots. Its botanicals include wormwood, cinchona bark and Bourbon vanilla. Many of the alpine plants are gathered by hand in the mountains around Cuneo.

Production takes several weeks and includes a resting period in the cellar. Filtration uses cold temperatures and paper filters. In the glass, it has an amber-red colour; its aromatic character combines bitter herbs with caramel and gentle spices.

At 18% alcohol, the Rosso is suitable for serving over ice or in a Negroni. It comes in a 0.75-litre bottle without gift packaging.

Tasting Notes:

• Nose: The nose is delicate and subtle. Green apple and freshly cut grass give way to barley porridge and star anise. Dried apple and cinnamon then emerge, along with a scent reminiscent of vetiver.
• Palate: The vermouth feels rounded and full on the palate. Orange and clementine combine with pepper and a floral lily note. A lightly salty touch and green walnut complement the flavour.
• Finish: The long, pleasurable finish brings together ripe pear, blackcurrant and sour cherry. Green almond, thyme and savory emerge as it develops. Malted barley becomes clearly perceptible when breathing out through the nose.

Distillery/Bottler:

The Mulassano recipe traces its origins to the historic café of the same name in Turin, for which the vermouth was originally developed. Today, Distilleria Bordiga in Cuneo produces the Mulassano vermouths, bringing together the aperitif culture of Piedmont's capital and the plant life of the nearby Alps.

Bordiga uses Piedmontese wines, alpine herbs and spices for these vermouths. Some of the plants and roots used for the extracts are gathered entirely by hand in the Occitan Alpine region. Production takes place at the distillery over several weeks and includes a resting period.
