• Nose: The nose reveals salted caramel, smoked apple, and roasted coconut. Praline, vanilla cream, and sweet first-fill oak complete the aroma, while deeply charred peat and a salty sea breeze provide maritime freshness.
• Palate: The palate is dominated by dry, ashy smoke and strong peat. Sweet malt, salted caramel, vanilla, and citrus oil join in, complemented by a distinct saltiness. A creamy sweetness from the Sauternes casks and dried apricots round out the profile.
• Finish: The finish is long, powerful, and dry, marked by ashy peat smoke, sweet malt, and maritime saltiness.

The barley for this whisky comes exclusively from the Octomore Farm on Islay, where it is grown in "Irene’s Field." The whisky matures for five years in a combination of first-fill bourbon casks and casks that were previously filled with Sauternes and Ribera del Duero.
