This six-year-old Paul John reveals the distillery's smoky side: whisky made from peated barley malt was selected for Batch 6. Drying the malt over peat allows it to absorb smoke, which later carries through into the whisky. Dark chocolate and a pronounced oily texture complete the character.

Maturation in tropical Goa takes place in considerably warmer conditions than in Scotland. The climate accelerates maturation while also causing substantial evaporation losses. That Boutique-y Whisky Company bottled Batch 6 at 47.6%, with a release of 175 bottles. The whisky is neither chill-filtered nor coloured and comes in a 0.5-litre bottle with gift packaging.

Tasting Notes:

• Nose: Oily, sooty smoke appears first. Dark bitter chocolate, fresh mint, burnt oak and salted caramel gradually emerge.
• Palate: The whisky feels oily and full-bodied on the palate. Moist chocolate cake combines with dark cherries, black pepper and oak, accompanied by woody smoke.
• Finish: Lingering smoke defines the long finish.

Distillery/Bottler:

Paul John belongs to John Distilleries, a company founded in 1992. Its single malt distillery is located in Goa on India's west coast. It uses Indian six-row barley from northern India and distils twice in copper pot stills. These long-necked stills were specially made in Gujarat. The distillery's general maturation practice includes charred American white oak casks stored in two different warehouses. Master Distiller Michael D'Souza oversees the development of the single malts.

That Boutique-y Whisky Company is an independent bottler that selects whiskies from various distilleries and also creates its own blends. Its range includes small, limited batches as well as whiskies that depart from their distillery's usual style. The hand-drawn labels explore stories and references connected with the distilleries and their bottlings.
