Penderyn Sherrywood Finish combines the distillery’s light, fruity character with a sherry-influenced maturation. After initially maturing in ex-bourbon casks, the single malt is finished in dry Oloroso sherry casks from Spain. This combination brings together dark fruits and toffee with the characteristic freshness of green apples, framed by sherry, oak and winter spices.

This distillery bottling belongs to the Gold Range and is bottled at 46% ABV. It is neither chill-filtered nor coloured.

Tasting Notes:

• Nose: The nose combines dark fruits and rich toffee with green apples and hazelnuts.
• Palate: The palate initially shows pronounced sweetness before giving way to refreshing dryness.
• Finish: Sweet toffee and sultanas remain present throughout the long finish.

Distillery/Bottler:

Penderyn’s story began in the late 1990s, when a group of friends set out to bring whisky production back to Wales after more than a century. They chose the village of Penderyn on the southern edge of the Brecon Beacons National Park as the distillery’s home, partly because of its natural spring. The first distillation took place in September 2000, and the whisky was officially launched on St David’s Day in 2004.

One of the distillery’s distinctive features is the copper Faraday Still designed by Dr David Faraday. The spirit passes through a multi-plate column, reaching the seventh plate before being drawn off at up to 92% ABV. This produces a particularly light and fruity new make, while subsequent cask maturation builds additional depth and complexity. Alongside bourbon and Madeira casks, Penderyn also uses dry Oloroso sherry casks, as it does for the Sherrywood Finish.
