Alte Erdbeere combines fully ripe strawberry fruit with maturation in stoneware and a Prinz wooden cask. The strawberry distillate is produced by vacuum distillation and rests first in stoneware before moving on to wooden cask maturation. Alongside its amber colour, the spirit has an intense fruit character with subtle woody nuances.

Harvest timing is crucial when processing strawberries, as they do not continue to ripen after picking. Prinz therefore uses fully ripe fruit, which is assessed for appearance and sensory quality at its fruit farm. Alte Erdbeere is bottled at 41% alcohol; this version contains 1 litre. For serving, a stemmed schnapps glass is recommended at 17 to 21 °C.

Distillery/Bottler:

Fein-Brennerei Prinz is based in Hörbranz, on the Austrian shores of Lake Constance. Its history began with a small cider mill and cooperage. The surrounding fruit-growing area benefits from the lake's moderating effect on temperatures and warm downslope winds at the edge of the Alps. These conditions also allow late-ripening fruit to reach full maturity.

Vacuum distillation is an important part of the distillery's work. The lower pressure inside the still reduces the boiling temperature, allowing delicate fruit aromas to be treated more gently. This makes distillation take longer, but requires lower temperatures. For Alte Erdbeere, Prinz complements this method with subsequent maturation in stoneware and wooden casks.
