Providence First Drops brings together two different ingredients from the same sugarcane variety: fresh juice and syrup made from Cristalline sugarcane. After slow fermentation, the rum is distilled in a Müller copper pot still. It remains unaged and is bottled at 57% in a 0.7-litre bottle.

First Drops is the distillery's first edition; the bottle label bears the wording Nov. 2019. Its character combines the vegetal and fruity facets of sugarcane with a surprisingly rounded, sweet-seeming texture.

Tasting Notes:

• Nose: Sugarcane leads the nose, which gradually opens up with floral notes. With air, creamy chocolate notes emerge; the sugarcane now seems candied while retaining its vegetal and fruity facets.
• Palate: The opening is rounded. Rustic cane sugar and molasses notes then emerge. The sweetness recalls candied chestnuts and meets green herbs, tall grass and spice.
• Finish: Candied chestnuts and milk chocolate continue into the finish. A delicate note of lime zest lingers in the later aftertaste.

Distillery/Bottler:

Distillerie de Port-au-Prince was founded in Haiti's capital in 2018. With Providence, it brought the production of white rum in batch-operated stills back to Haiti. First Drops was created under Herbert Barbancourt Linge, a descendant of the Barbancourt family. The Müller copper pot still and the use of sugarcane juice alongside sugarcane syrup define the production approach of this first edition.
