Tasting Notes:
- Nose: Gentle, green, and fragrant nuances. The overall impression is round and balanced. The top notes of soft vanilla sponge cake transition into aromas of caramelized apple tart on a puff pastry base with vanilla ice cream. A drop of water adds a fragrant note of rose petals or exotic grasses, while the gentle vanilla notes increase over time.
- Palate: Creamy-soft texture that initially recalls buttery cakes with delicate vanilla before transforming into a vibrant, slightly tart freshness, ultimately interwoven with a subtle peppery spice. Layers of green, grassy, fruity, and nutty flavors merge into a harmonious whole. A splash of water adds extra softness to the taste, softens the acidity, and highlights the grassy, herbal character – without compromising the balanced sweetness of the composition.
- Finish: The medium-long, clear, crisp, and nutty-spicy finish is rounded off with a pinch of white pepper. With a drop of water, it remains peppery but is softer and more controlled.
