Saburomaru VII The Chariot represents the Saburomaru Distillery’s heaviest use of peat up to that point. This Japanese single malt was distilled in 2021 and bottled in 2025 at 48%. The bottle contains 0.7 litres; the whisky is non-chill-filtered and contains no added colouring.

For the first time in its history, the distillery used super heavily peated Highland peat malt at 80 ppm, together with ale yeast and whisky yeast. Distillation took place in the ZEMON still.

Embers, ash and fern define the peat smoke. Rock candy, resin, menthol, orange peel, ripe red apple, conifer wood and ginger provide sweet, fruity, cooling and spicy counterpoints to the powerful smoky structure.

Tasting Notes:

• Nose: On the nose, embers, ash, fern and peat smoke mingle with rock candy, resin, menthol, orange peel, ripe red apple, conifer wood and ginger.
• Palate: The whisky is rounded on the palate, where powerful, ashy peat meets sweetness and hints of apple and ginger.
• Finish: The finish is dense and lingering, with peat smoke completely filling the tongue.

Distillery/Bottler:

The Saburomaru Distillery in Tonami, Toyama Prefecture, produces and bottles Saburomaru VII The Chariot itself. Its roots lie with Wakatsuru Shuzo, which was founded in 1862 and began producing whisky in 1952. Following an extensive renovation, the distillery made a fresh start in 2017.

Developed in 2019 by the distillery and Oigo Seisakusho, ZEMON is a cast copper-tin pot still. Its construction is based on the bell-casting technique of Takaoka’s traditional copper craftsmanship. Saburomaru VII The Chariot was distilled in this still.
