The Classic Tasting Set explores the different ways Seven Seals refines its spirits made from malted barley. Sherry, port wine and Amarone influences sit alongside two distinctly peat-smoky expressions. The book-shaped gift box contains five miniatures and an accompanying booklet.

The set contains 0.05 litres each of Sherry Wood Finish, Port Wood Finish, Amarone Wood Finish, Peated Port Wood Finish and Double Wood Finish. The first four expressions have an alcohol content of 46%; Double Wood Finish contains 58.7% and is bottled at cask strength. Together, the miniatures contain 0.25 litres. The spirits are triple-distilled, non-chill-filtered and bottled without added colouring.

The selection ranges from toffee, gingerbread and caramelised almonds in Sherry Wood Finish to a combination of fruit, caramel and mocha in Amarone Wood Finish. Port Wood Finish brings together different malts from the same distillery, combining honey, dried fruit, caramelised nuts and gingerbread with a hint of peat smoke. Smoke, raisins and oriental spices are more pronounced in Peated Port Wood Finish. The cask-strength Double Wood Finish gives the set its bold wood and peat-smoke accent.

Tasting Notes:

• Nose: Sherry Wood Finish offers aromas of toffee, gingerbread, sweets and caramelised almonds, with festive spices adding to the sweet character. Amarone Wood Finish reveals dried red berries and apple compote, alongside orange zest, toffee and vanilla with a little cinnamon. Peated Port Wood Finish shows dried fruit and raisins on the nose.
• Palate: Sherry Wood Finish is soft and rounded. Toffee and nuts shape the flavour, while the sweet baked-goods and spice notes from the nose also return on the palate. Amarone Wood Finish combines woodland berries and pears macerated in red wine with caramel, bold mocha and butterscotch. Ginger biscuits add a spicy baked-goods note. Peated Port Wood Finish combines distinctive peat smoke with full-bodied dried-fruit and raisin notes. Honey and oriental spices complement the balanced flavour.
• Finish: The candy sweetness and orange of Sherry Wood Finish linger for a long time. Amarone Wood Finish has a medium-length, soft and gentle finish. Slightly bitter coffee and warming white pepper shape the balanced aftertaste. Peat smoke and oriental spices linger for a long time in Peated Port Wood Finish.

Distillery/Bottler:

Seven Seals Innovation AG is based in Stans in the canton of Nidwalden, with production sites in Langenthal and Aarwangen in the canton of Bern. The company develops spirits whose refinement relies on a patented physical method. This accelerates the transfer of aromas between wood and spirit, allowing different flavour expressions within the Classic Line.

The limited availability of suitable oak casks is one of the starting points for this approach. The process allows shorter maturation periods and also uses wood offcuts from cask production, as well as wood from dismantled, retired casks. Refinement therefore does not depend solely on occupying whole casks for years. The Classic Tasting Set is bottled in Switzerland and brings together five expressions from this range.
