Shortcross Rye & Malt brings together malted rye and malted barley from Ireland with maturation in new Chinquapin oak and former bourbon casks. The whiskey matures for at least five years. Heavily charred Chinquapin casks are used alongside bourbon and Tennessee whiskey casks filled with this whiskey for their first use in its maturation.

Production includes fermentation lasting more than 140 hours and double distillation in copper pot stills with capacities of 450 and 1750 litres. The water comes from the aquifer beneath Rademon Estate. Distillation, maturation and bottling all take place on the estate. Released in March 2022, Rye & Malt was the distillery’s second whiskey release after its first single malt. This bottling comes at 46% alcohol in a 0.7-litre bottle, without chill filtration or added colouring.

Tasting Notes:

• Nose: Gentle spice mingles with orange peel and creamy caramel fudge on the nose.
• Palate: The palate reveals sweet preserved ginger, fresh apricot and green apple, followed by dark honey.
• Finish: The finish is velvety and full-bodied. Sweet jam and rich fudge are accompanied by gentle spice.

Distillery/Bottler:

Rademon Estate Distillery is located in County Down, Northern Ireland. Its founders, Fiona and David Boyd-Armstrong, laid the groundwork for their business in 2012 while visiting distilleries across Europe, America and Asia. Construction of the distillery on the historic estate began that same year.

German manufacturer Christian Carl supplied the first copper distilling installation in 2013. It combined a 450-litre pot still with two rectification columns. Production initially focused on Shortcross Gin, launched in April 2014; the first whiskey distillation followed in 2015. In developing its whiskeys, the distillery experiments with different grain recipes, fermentation methods and cask combinations. David Boyd-Armstrong also oversaw the distillation of Rye & Malt.
