Special features: This 17-year-old Speyside single malt spent its full maturation in first-fill Oloroso sherry butts. Here, first fill means that the sherry casks were used to mature Scotch whisky for the first time, allowing them to contribute a particularly pronounced Oloroso-led character. Signatory Vintage combined the selected casks as a small batch for 100 Proof Exceptional Cask Edition #16 and bottled the whisky at 57.1% ABV. This strength corresponds to 100 proof in the traditional British system. The long sherry-cask maturation layers concentrated dried fruit with dark chocolate, roasted nuts, spice and structured oak.

Tasting Notes:

• Nose: Raisins, dates and figs lead the aroma, joined by orange peel, dark chocolate and roasted walnuts. Cinnamon, clove, polished oak and a fine tobacco note add depth to the generous fruit.
• Palate: Powerful and oily with concentrated dried fruit, toffee and dark chocolate. Roasted nuts, hints of espresso and warm baking spices meet an increasingly dry oak structure and the full-bodied character of the Oloroso casks.
• Finish: Long, warming and increasingly dry. Cocoa, orange peel, walnut, tobacco and spicy oak linger with a sustained sherry note.

Distillery/Bottler: At Signatory, the Speyside (M) designation refers to Macallan. Exceptional Cask Edition #16 is presented as an independent Signatory Vintage bottling under that designation. Signatory Vintage acts as the independent bottler: the company selects casks from Scottish distilleries and bottles the resulting whiskies in its own ranges. Founded in 1988 by Andrew Symington and his brother, the company began with a Glenlivet distilled in 1968. Andrew Symington acquired Edradour Distillery in 2002; since 2007, Signatory's operational centre for warehousing and bottling has been based at the Edradour site in Pitlochry.
