With Ginger Beer Cask #7, Starward brings together whisky maturation and its own ginger beer production. For this seventh release, whiskies matured in red wine and Apera casks are married before being finished in former ginger beer casks. Apera is an Australian fortified wine. The finishing casks had already held Starward whisky before being filled with the distillery's homemade ginger beer. Its recipe includes fresh ginger and citrus peel and is adjusted for each release.
For release #7, Starward used more fresh ginger in its ginger beer than for earlier releases. The result combines pronounced spice with tropical fruit and sweet accents. This single malt belongs to the limited Starward Projects range. Distilled in 2018, the whisky was bottled in 2022 at 48% in a 0.7-litre bottle and comes with gift packaging.

David Vitale founded Starward in Melbourne in 2007 with the aim of developing a distinctly Australian whisky. Wine from the surrounding region and the city's changeable climate became important foundations: locally available red wine casks offer varied maturation possibilities, while temperature fluctuations encourage interaction between the whisky and the cask wood.
For its single malts, Starward uses locally grown malted barley from Geelong. Both brewing and distilling yeasts are used during fermentation to develop the spirit's fruit-forward character. Distillation takes place in copper stills from Tuscany. Starward Projects gives the distillery team scope to explore new methods and unusual casks, resulting in limited special releases such as Ginger Beer Cask.
