Whisky from ex-bourbon casks previously used for whisky maturation was selected for this thirty-year-old Talisker. It was bottled in 2023 at a natural cask strength of 49.5%, with 2,610 bottles produced. This single malt is neither chill-filtered nor coloured and comes in a premium box.

Ripe apple, vanilla and nutty sweetness sit alongside smoke and gentle salinity. Pepper remains a recognisable Talisker trait, though it emerges more softly in this long-matured bottling.

Tasting Notes:

• Nose: The nose brings freshly picked fruit and ripe apple, accompanied by oak spice and gentle vanilla sweetness. Tropical fruit, white pepper and dark chocolate emerge with time.
• Palate: Warm smoke and a mild salty note appear on the palate. Fruit, smouldering embers and the sweetness of pecan fudge gradually follow.
• Finish: Fruit and toffee linger in the long finish. A hint of sea air and the gentle warmth of black pepper fade slowly.

Distillery/Bottler:

Brothers Hugh and Kenneth MacAskill founded the distillery in 1830 beside Loch Harport in the village of Carbost. Talisker is the oldest operating distillery on the Isle of Skye and now belongs to Diageo.

At Talisker, the wort ferments for about 70 hours in Oregon pine washbacks, with lactic acid bacteria also playing a role. The fermented wash is distilled twice in copper pot stills. During the first distillation, reflux returns some of the heavier vapours to the still. Traditional worm tubs then condense the vapour.
