Teeling Stout Cask brings whiskey and beer together through a cycle of cask reuse. Galway Bay Brewery used Teeling Small Batch casks to mature its 200 Fathoms Imperial Stout. The casks then returned to Teeling, where the Small Batch whiskey underwent an additional maturation that imparted dark, malty influences from the stout.

The foundation is a blend of grain and malt whiskey. The whiskeys initially mature in ex-bourbon casks and are then married in Central American rum casks before receiving the additional stout finish. This partnership launched Teeling’s Small Batch Collaborations series; 12,000 bottles were planned for the first release. The whiskey is bottled at 46% without chill filtration.

Tasting Notes:

• Nose: On the nose, dark chocolate and truffles meet tart apples and a suggestion of sea spray.
• Palate: On the palate, malt sweetness combines with roasted barley. Tart fruit and black cherries add to the flavour.
• Finish: The finish reveals bitter Seville oranges and wholemeal biscuits, accompanied by honeycomb honey and cream.

Distillery/Bottler:

The Teeling family’s whiskey history dates back to 1782, when Walter Teeling established a distillery on Marrowbone Lane in Dublin. Jack and Stephen Teeling continued this legacy with their own whiskey company from 2012. In 2015, they opened a new distillery in the historic Liberties distilling district, close to the family’s former site. It was Dublin’s first newly opened distillery in more than 125 years.

Unusual cask maturations are part of Teeling’s approach. Through its Small Batch Collaborations, the company works with other drinks producers and uses their casks to introduce additional flavour influences. Its partnership with Galway Bay Brewery connects the cask ageing of an imperial stout with the finishing of Irish whiskey.
