Special features: The Vieux Sajous 5 years 2020/2025 is a remarkable Clairin from Haiti that impressively showcases the development of sugarcane brandy over five years. Under the guidance of Velier, a pioneer in the bottling of Clairin, this rum was distilled from organically grown sugarcane of the old Cristalline variety from Saint Michel de l'Attalaye. After distillation from freshly pressed sugarcane juice, the rum aged tropically in a mix of 19 whisky, rum, and bourbon barrels, resulting in a remarkable diversity of flavors. This fourth edition of the Vieux Sajous series (after the vintages 2017, 2018, and 2019) reveals with medicinal accents, pharmaceutical and spicy notes the outstanding depth that Clairin can achieve after several years in the barrel.
Tasting Notes:
- Nose: Intense and refined with notes of nutmeg, kiwi, honey, and fresh sugarcane juice.
- Palate: Herbal and spicy with hints of cinnamon, ginger, and melted sugarcane.
- Finish: Long-lasting with flavors of chocolate and vanilla, complemented by hints of bay leaf, sage, gentian root, and dried banana.
