West Cork Distillers was founded in 2003 by childhood friends John O’Connell, Ger McCarthy and Denis McCarthy. Their first distilling experiments used two small pot stills in a room behind Denis McCarthy’s home in Union Hall; today, the company operates in Skibbereen in the west of County Cork.
The distillery builds some of its own equipment and sources all of its grain from Irish farmers. The whiskeys in the Classic Blends range are triple-distilled, non-chill-filtered, matured and bottled on site; Bourbon Cask belongs to this range.
