West Cork Distillers is based in Skibbereen, in Ireland's County Cork. Its beginnings were modest: distillation started in 2003 in a room behind one of the founders' houses. The business moved to Market Street in Skibbereen in 2014, before opening its new distillery on Marsh Road in 2020. As the business grew, a substantial proportion of the equipment it needed was built in-house.
At its current site, West Cork operates both pot stills and column stills. Seven warehouses on the distillery grounds can hold up to 55,000 casks, and the bottling facilities are also on site. Cask selection is particularly evident in the seven-year-old single malt: the distillery combines Oloroso sherry casks from Spain with subsequent maturation in Bourbon Barrels.
