Special Features:

West Cork Black Cask is a five-year-old blend made from Irish grain and malted barley. Following triple distillation, the whiskey is finished in bourbon barrels that were charred twice to level 5. These heavily charred barrels shape its sweet and spicy character, led by vanilla, caramelised brown sugar and oak.

West Cork Distillers uses a patented technique to achieve the level 5 char. The Iron Bellows used for this process was made by local blacksmith Pat Whooley.

Tasting Notes:

• Nose: The nose combines resinous oak, vanilla and wood shavings with cereal sweetness, ginger, cinnamon and caramelised brown sugar.
• Palate: The whiskey feels light and creamy on the palate; malt, vanilla, caramel and chocolate are accompanied by ginger and well-balanced oak spice.
• Finish: The finish is medium-long to long, with fading sweetness, creamy oak spice, gentle pepper and a delicate hint of smoke.

Distillery/Bottler:

West Cork Distillers began in Union Hall in 2003 with two small pot stills. The distillery is now located in Skibbereen and remains owned by its founders. It processes Irish grain and Irish barley, triple distils its whiskey and handles every stage from grain to bottling itself. Black Cask is one of the company’s own bottlings.
