Bernard and Rosemary Walsh founded Walsh Whiskey in Carlow in 1999. They work with selected partners for their whiskeys, combining Irish spirits of different styles with carefully chosen casks. In selecting casks, Walsh Whiskey pays particular attention to their previous contents as well as the quality of the wood and how the casks are constructed.
Walsh Whiskey operated its own distillery for a time but has since parted with it. In 2021, Amber Beverage Group acquired an 80% majority stake; Bernard and Rosemary Walsh retained a stake in the company at the time.
