XO Caribbean Rum from Rest & Be Thankful brings together two rum origins in one blend: Jamaica and Guyana. The rums are made from molasses and are at least six years old. The composition includes distillates from both pot stills, which operate in batches, and Savalle distillation columns. For this bottling, XO stands for Extra Old.

Tropical fruit alongside toffee and coffee defines this blend's balanced character. Rest & Be Thankful bottles it at 40% alcohol. It is also suited to drinking neat from a tulip-shaped glass.

Tasting Notes:

• Nose: On the nose, ripe banana and pineapple mingle with delicate caramel notes.
• Palate: The rum feels smooth on the palate. Toffee and a light coffee note complement each other.

Distillery/Bottler:

Rest & Be Thankful is an independent bottler with roots in the Scotch whisky business. The brand began in 2012 with single-cask bottlings; its earliest releases included whiskies from Bruichladdich, Port Charlotte and Octomore. Springbank and Bowmore were among the names added later. Today, its range includes rum blends as well as selections from individual casks.

The name comes from a resting place on Scotland's A83 above Glen Croe. The team knew the spot from journeys between Glasgow and the ferry to Islay while representing Bruichladdich until the distillery's sale in 2012. A stone inscription there commemorates the soldiers who completed the old military road in 1753. After the steep climb, travellers would pause at the highest point. Jamaica also has a place called Rest and Be Thankful, linking the two countries whose spirits the brand bottles.
