Yokota Edo no Utage - Nihonbashi Sake

Special features: This Junmai Sake is brewed according to traditional Edo methods and uses locally grown Asa-no-Hikari rice with a polishing ratio of 70%. Fermented with the oldest known sake yeast strain, Saccharomyces sake, and without the use of activated charcoal (Muroka), it retains its natural golden color and authentic aromas. After aging for 2 to 3 years in enamel tanks at room temperature, it develops remarkable depth and complexity.

  • Nose: Aromas of cooked rice, gentle umami, dried fruits, and a slight earthiness.
  • Palate: Smooth and balanced with warm rice notes, mild umami, delicate sweetness, and depth from aging.
  • Finish: Long and persistent with soft, drying rice notes and subtle tannins as well as umami echoes.
